New to the team in our Birstein Ayurveda kitchen: Sruti Stojchevski. With more than 25 years of experience in Ayurvedic cuisine, he has recently been delighting our guests with delicious and special creations and a great deal of passion for Ayurvedic cooking. He discovered Ayurveda early on in his life and has lived it authentically for the last 14 years in New Zealand with his own café. We are delighted to welcome him to Birstein!

 

As our guests in Birstein are so enthusiastic about his Ayurvedic peanut sauce, we would like to share the recipe with you today and hope you enjoy preparing and enjoying it!

 

Ayurvedic peanut sauce

For 3-4 people

 

Ingredients:

  • 120 g peanut butter
  • 120 g coconut milk
  • 1 tbsp tomato puree or 60 g strained tomatoes
  • 200 ml water
  • 1 tbsp ghee
  • ½ tsp cumin seeds
  • ½ tsp turmeric
  • ½ chili pepper as required
  • 1 pinch of asafoetida
  • Salt as required

 

Preparation:
Place the peanut butter, coconut milk, tomato puree or tomato purée and water in a blender and blend. Heat the ghee in a pan and lightly fry the cumin seeds in it. Add the finely chopped chilli pepper and asafoetida and fry briefly. Then pour the liquid from the blender into the pan, stir with a whisk and season with salt and turmeric. cook for 10 minutes over a low heat until the sauce has thickened.

 

Then enjoy! We serve the sauce here with crispy oven vegetables, couscous and a gratin of mixed vegetables.
