Snacking is allowed in winter!
The seasonally recommended foods such as almonds, walnuts, rice, wheat, milk, ghee and dried fruit are ideal for conjuring up tasty desserts that boost physical and mental well-being. If these are also prepared with typical Christmas spices such as aniseed, cinnamon, cloves, ginger, saffron and nutmeg, this not only improves the taste but also the digestibility of the food. Cinnamon and ginger, with their vata-kapha-balancing, metabolism-strengthening and expectorant qualities, are particularly recommended for the cold winter days!
Ayurvedic dessert recipe for physical and mental strengthening in winter:
Kheer - classic rice pudding
Ingredients:
- 4 tbsp basmati or rice pudding
- 1 liter organic whole milk
- 2-3 tbsp cane sugar
- ¼ tsp cinnamon powder
- ¼ tsp ginger powder
- 1 MS nutmeg powder
- 3-4 saffron threads
- 1 tbsp almond slivers
Preparation:
- Heat the rice in a large pan and dry roast while stirring until the rice smells slightly nutty.
- Pour in the milk and bring to the boil while stirring. Allow the milk to simmer for 20 - 25 minutes. Stir again and again so that nothing boils over or burns.
- Now add 2-3 tablespoons of sugar (Indians use 3 tablespoons), the saffron threads, cinnamon and ginger powder. Simmer for a further 5 minutes, stirring, until the rice is really soft and the milk has reduced to a creamy paste.
- Remove from the heat, pour into dessert bowls and top with almond slivers.
